In 2012, Waitte purchased the 22-acre Sundance Ranch in Calistoga, and received approval to convert a 15,000-square-foot covered riding arena into a 60,000-gallon winemaking facility. Thomas Rivers Brown designed the facility with 36 closed and open-top fermentation tanks. Tamber Bey winery was in full operation for the 2013 harvest. Two 5,000-square-foot barrel rooms are maintained at different climate zones for optimal ageing.
Tamber Bey’s portfolio of wines are made under the leadership of winemaker Derek Flegal. Thomas Brown is consulting winemaker. The wines are made from Waitte’s estate-grown fruit from Napa Valley’s Yountville and Oakville AVAs, and from grapes carefully sourced from select vineyards in Napa, Sonoma and Lake counties. The winemaking staff also produces wine for 20 custom crush clients.
